Boulder-Famous Beet Hummus Recipe
Makes approximately 4 cups
INGREDIENTS:
5 Medium Beets, scrubbed
2 Tablespoons olive oil
1/4 Cup water
1/4 Cup Tahini Paste
1/4 Cup Lemon Juice
1-2 Small Garlic Cloves
1 Teaspoon Sea Salt (or to taste)
PREPARATION:
Preheat oven to 375ºF
Place whole cleaned beets in a baking pan and drizzle with olive and pour water around the beets and cover with foil.
Cook until the beets are easily pierced through with a fork, approximately 45 minutes
When beets are pierced easily with a fork, remove from the oven.
When cooled enough to handle, rub skins off with a cloth or paper towels. (if skins are not coming off easily, you can peel it with a knife!)
Chop beets and put in a food processor
Add tahini and lemon juice, garlic and salt and blend well.
Chill then Serve
Keeps for Approximately 7-10 days in the refrigerator
